Recipes for the most magical time of the year
It’s the most magical time of the year and my all-time favorite, Christmas! Christmas isn’t about gifts, it’s more about spending quality time with your family and loved ones, creating memories that will last a lifetime. And the memories I love creating, are recipes!
Nothing says “Christmas Morning” like a spread of all my favorite things that I make for my family. It’s also the anniversary of my keto journey. I started looking into the keto lifestyle last Christmas. And this Christmas, I get to share all of my new keto recipes with not only my family but also with you guys!
This year has been a challenging one for all and I hope I put a little smile on your faces with these fun and easy recipes to brighten your Christmas morning.
Recipe #1: Christmas Keto Waffles
Ingredients:
§ 4 tbsp. coconut flour
§ 1 tbsp. almond flour
§ 4 medium/large eggs (separated: egg yolk & egg whites)
§ 4 tbsp. granulated sweetener
§ 1 tsp. baking powder
§ 2 tsp. vanilla extract
§ 3 tbsp. milk/cream
§ 1 tbsp. butter (melted)
§ Avocado oil spray
§ Waffle maker
§ Christmas cookie cutters
Instructions aka (The Play-By-Play):
1. Whisk egg whites until firm. I use a hand mixer, which can be easier, and less work on your hands. But to each its own! Set aside once it forms stiffness.
2. In another bowl, combine the egg yolks, almond flour, coconut flour, baking powder, and sweetener. Mix it altogether until it is smooth.
3. Stir in the melted butter.
4. Now, add the vanilla and milk/cream (depending on your choice). Mix thoroughly.
5. Take a spoonful at a time of the whisked egg whites and gently fold into the yolk mixture. Don’t overfold it because you want to keep the fluffiness.
6. Repeat this step until all of the whisked egg whites are combined with the yolk mixture.
7. Spray the waffle maker with avocado oil spray and use a brush to make sure all of it is covered.
8. Take 3 tbsp. of the keto, waffle mix and spread it evenly over the waffle maker.
9. Cook until it’s golden brown and removes.
10. Repeat this until all of the waffle mixes is used.
11. Set aside until it cools.
12. To add a little twist use Christmas cookie cutters to make cute shapes out of the waffles.
13. Add whipped cream and powdered sugar.

Recipe #2: Keto Turkey Egg Bites
Ingredients:
§ 6 pieces of turkey bacon
§ 3 large eggs
§ ¼ tsp. black pepper
§ ¼ tsp. salt
§ Shredded cheddar cheese
§ Parsley flakes, for garnishing purposes
§ ½ cup of milk
§ Avocado oil spray
§ Muffin baking pan
Instructions aka (The Play-By-Play):
1. Preheat oven to 350º F.
2. Whisk eggs with salt and black pepper.
3. Add milk and whisk some more.
4. Coat muffin baking pan with avocado oil spray.
5. Place turkey bacon inside each holder.
6. Pour a spoonful of whisked eggs into a muffin baking pan.
7. Garnish with parsley flakes.
8. Bake for 350F for 15 minutes until eggs are cooked.
9. Remove once cool.
10. Bon Appétit!
Recipe #3: Keto Cauliflower Hash Brown Squares
Ingredients:
§ 3 cups grated cauliflower
§ 1 large egg
§ 1 cup turkey bacon bits
§ 1 cup shredded cheddar cheese
§ ½ tsp. salt
§ ¼ tsp. paprika
§ ¼ tsp. black pepper
§ Parsley flakes
§ Cilantro
§ Thyme
§ Avocado oil spray
Instructions aka (The Play-By-Play):
1. Preheat oven to 350º F.
2. In a microwave-safe bowl, place grated cauliflower on high for 3 minutes. Set aside to cool.
3. Place cauliflower in a paper towel and squeeze any excess water out.
4. In a mixing bowl, place cauliflower, shredded cheddar cheese, egg bacon bits (turkey bacon cut into small squares), salt, black pepper, paprika, parsley flakes, cilantro, and thyme. Mix all together.
5. In small 4-inch square baking pans, coat with avocado oil spray.
6. Fill each baking pan with a cauliflower mix and flatten leaving some room at the top for baking.
7. Garnish with more parsley flakes.
8. Bake at 350F for 15 minutes until golden brown.
9. Set aside to cool.
10. Bon Appétit!
Recipe #4: Keto 90 seconds Cheddar Bread
Ingredients:
§ 1 large egg
§ 1 tbsp. milk
§ 1 tbsp. almond flour
§ 1tbsp coconut flour
§ 1 tbsp. avocado oil
§ ¼ tsp. baking powder
§ ½ shredded cheddar cheese
§ Parsley flakes
§ Onion & garlic powder
Instructions aka (The Play-By-Play):
1. Whisk egg and milk together.
2. Add in almond and coconut flour along with the baking powder and avocado oil mix all together until smooth
3. Sprinkle garlic and onion powder and mix.
4. Add shredded cheddar cheese and stir gently.
5. Garnish with parsley flakes.
6. Place in a microwave-safe cup and place in microwave to cook on high for 90 seconds.
7. Let it cool and flip onto a cutting board.
8. Cut into 3 slices.
9. Bon Appétit!
Recipe #5: Christmas Keto Donuts
Ingredients:
§ 2 ½ cups almond flour
§ ½ cup granulated sweetener
§ 4 eggs
§ 1 tsp. baking soda
§ ¼ tsp. vanilla extract
§ ¼ cup milk
§ Lily’s White Baking Chips
§ Sprinkles
§ Food coloring for frosting
§ Avocado oil spray
§ Coconut oil
Instructions aka (The Play-By-Play):
1. Preheat oven to 350º F.
2. Grease silicone donut molds or donut pan with avocado oil spray and set aside.
3. In a mixing bowl, add dry ingredients: almond flour, baking soda, and sweetener and mix all together.
4. In another mixing bowl, whisk eggs, vanilla, and milk together until smooth.
5. Combine the dry and wet mixes together.
6. Place donut batter into a ziplock bag and cut one of the ends and gently squeeze into the greased donut molds. Make sure to leave the room at the top to rise while baking.
7. Bake at 350F for 12-15 minutes.
8. Remove from oven and place to cool on cooling rack tray.
Frosting:
1. Take a microwave-safe bowl and place a spoon of coconut oil along with a cup of Lily’s White Baking Chip morsels. Melt for 30 seconds interval until smooth. I use the “Chocolatier Electric Chocolate Melting Pot” that I found on Amazon for under $25 to melt my chocolate instead of using the microwave. But you can do either one.
2. Dip the donut into melted vanilla chocolate. Use a spoon to get each corner of the donut with the chocolate.
3. On a flat plate, take a spoonful of melted vanilla chocolate and add a few droplets of red, green, or blue food coloring. Mix the food coloring of your choice with a spoon until fully combined with melted chocolate.
4. Dip donut into the melted colored chocolate and add sprinkles.
5. Repeat for each donut and decorate to your liking.
6. Place in the fridge to cold for 10 minutes and serve.

Now that you’ve made your Christmas Morning spread, it’s time to enjoy it with a nice designer latte. This is the signature coffee that I
make every morning. I’ve found cute coffee stencils from a lot of small businesses on Etsy. Here’s how I make it!
Designer Latte Recipe
Ingredients:
§ 1 ½ cup hot freshly brewed espresso coffee
§ 1 cup milk
§ Sweetener
§ Cocoa powder
§ Designer or holiday coffee stencils
§ Milk frother or whisk
§ All-purpose stainless steel shaker
Instructions aka (The Play-By-Play):
1. Place freshly brewed espresso coffee into a cup and make sure it’s filled up to ¾ of the cup. You want to leave enough room for the frothed milk.
2. Use a milk frother to whisk milk. Make sure milk is warm.
3. Pour frothed milk into the cup filling all the way to the top.
4. Place the stencil over the cup making sure the frothed milk is not touching it.
5. Sprinkle cocoa powder using an all-purpose stainless steel shaker.
6. Now it’s time to enjoy that Christmas spread of yours!
